Ingredients:
1 pound beef liver
4 eggs
1 cup cornmeal
2 large garlic cloves, minced
Cut liver into several small pieces. Mix liver with eggs, cornmeal, and garlic in a blender or food processor until smooth. Pour into 8 inch square baking pan that has been treated with fat-free non-stick cooking spray. Pre-heat oven. Bake for 30 minutes at 350 degrees. Cool, cut into bite-size squares and serve. Store in air-tight container in refrigerator.
